Peanut Butter & Honey Cookies
Crispy on the outside & chewy on the inside!
1 stick unsalted butter, room temp
3/4 cups granulated sugar
1/4 cup honey
1/3 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
1 1/2 cups oats
3 Tablespoons all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Preheat oven to 350.
Cream butter, sugar, and honey in the bowl of electric mixer, until light and fluffy.
Meanwhile, mix together all dry ingredients.
Add peanut butter, egg and vanilla to butter mixture. Scrape down bowl.
Slowly incorporate dry ingredients into the wet.
Drop tablespoon-sized scoops of dough onto lined cookie sheets, a few inches apart. Bake 12-13 minutes.
Makes 30-36 cookies.

spray cooking spray into measuring cup before pouring in honey. not perfect but significant improvement for honey removal.

I just re-read this post (because I am obsessed with those cookies right now) and noticed you have "1/2 teaspoon baking powder" twice. Fix it! I would include it twice, because I follow directions EXACTLY or else I mess things up. :P
