Brown Sugar & Spice Shortbread

{Turkey Style}

Here's a super easy recipe that takes simple shortbread up a notch.
After rolling out our dough, the kids cut their hand prints out- using a wooden skewer- then decorated them, once baked. Chocolate chips, mini-marshmallows, dried cranberries, pretzel sticks, and my favorite Trader Joe's Omega-3 nut mix were offered as embellishments... there were plenty of nuts and cranberries left over. I guess they see enough of those in their lunch boxes. Camden's poor guy never even stood a chance of being photographed before being gobbled up!

2 sticks unsalted butter, room temp
1/2 cup organic brown sugar
2 cups whole wheat flour (or 1/2 WW & 1/2 AP)
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 teaspoon vanilla extract

{preheat oven to 325}
1. Cream butter & sugar in the bowl of an electric mixer; add vanilla.
2. Sift together dry ingredients; slowly incorporate into butter mixture just until a ball starts to form.
3. Wrap dough in plastic, flatten a bit, and chill at least an hour.
4. Roll out dough onto a floured surface and cut into desired shapes; transfer to baking sheets.
5. Freeze cutouts for 15 minutes, so they retain their shape.
6. Bake 12-13 minutes, until edges are just barely golden; cool on wire rack.

{This recipe stands very well on its own, by the way. The extras were just for fun!}
