Cookie Monday

Carrot Cake Muffins

I have the best recipe for Carrot Cake, which I used for Chayse's
"Garden Cupcakes" at his party last weekend {party photos coming Wednesday!- for now they remain inside Auntie Gaga's (aka Amanda) fancy new camera}. For 'anytime' muffins, I simply cut the sugar and salt in half, and bump up the nutrition by switching to whole wheat flour and adding flax. I also replace the frosting with a crunchy topping of granola, walnuts, and coconut. Suddenly the yummy cupcakes become something suitable even for breakfast! They're not exactly cookies, but sounded good today. This time we threw in about a cup of blueberries {SuperFood} that were starting to wilt in the fridge. Here is the healthy muffin-version of the cupcake, a quick and simple one-bowl recipe:


1/3 cup soybean oil {SuperFood}
1/3 cup organic sugar (evaporated cane juice)
2 eggs
zest & juice of half a medium orange {SuperFood}
1 teaspoon vanilla
1/2 teaspoon cinnamon {SuperSpice}
1/4 teaspoon allspice
1/4 teaspoon sea salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup ground flax seed {SuperFood}
3/4 cup whole wheat flour {SuperFood}
1 1/2 cups finely shredded carrot {SuperFood}
1/2 cup unsweetened coconut, divided
1 cup natural granola {SuperFood}

1/4 cup chopped walnuts {SuperFood}


1. Preheat oven to 350 degrees. In a large bowl combine wet ingredients: oil, sugar, eggs, zest, juice, and vanilla.
2. Add spices, salt, baking powder & soda, and flax; stir well.
3. Stir in flour until just combined. Fold in carrot and 1/4 cup of coconut.
4. Divide evenly into muffin tin (makes about 12); top each with remaining ingredients
5. Bake for 20 minutes. Cool on a wire rack.

Those sound so yummy... I'll have to make some tonight to sustain me on the plane tomorrow! I was wondering when we'd get to see pics from Chayse's birthday. :)
