$12 Dinners: Night Three

Turkey Chili Casserole

You'll need:
*Night Two's leftover chili
*one pound whole grain elbow macaroni, cooked until al dente
*one pound of ground turkey
*8 ounces extra sharp cheddar, shredded
*2 cups fresh breadcrumbs, combined with 2 tablespoons extra virgin olive oil

Preheat oven to 375 degrees. Divide cooked pasta, reserving half for Night Four. Over medium-high heat, brown turkey in a little olive oil, and season to taste. Meanwhile, pass the chili through the coarse blade of a food mill, creating a new texture. Remove half the cooked turkey from the pan, and add to Night Four's reserved pasta (you should have half a pound each of pasta & turkey for Night Four). Add pureed chili to the turkey that remains in the pan, and heat through. Lower the heat to medium-low, and add cheese to the mixture, stirring until melted. Stir in the other half of the pasta, then transfer to a large baking dish. Top with moistened breadcrumbs, and bake until golden brown and bubbly, about 30 minutes. I served this with a baby spinach & tomato salad.

Just wanted to say thank you for your comment on Mama Manifesto's blog! Aren't those Mama's fabulous? I clicked to your link and the more I read about you, the more I realized that we have lots in common! I have 3 C's as well. Carson Beth, Chloe (also) and Campbell (more commonly known as Cam or Cammi)...all girls of course. I also LOVE reading about NieNie. She has completely captivated me. I think the whole family is beautiful and I love reading her posts. I'm jealous of your Monday Cookie Days, I've attempted this only a handful of times, while little miss is napping and the older two can assist. So much fun, but you are super mom to do it weekly! :)
