$12 Dinners: Night One

I usually shop for fresh dinner ingredients every single day, but multiple trips to the grocery store per week tends to lead to impulse shopping, which really adds up! So last week I challenged myself to spend no more than $12 per dinner, for four nights in a row, making one big shopping trip on the first day. Not only did I stick to my budget, but I morphed elements from each night's meal to the following meal, making less work for myself. All of the recipes can be prepped during the day. I thought I'd share...

On the menu:
Night One: Rosemary Lemon Chicken
Night Two: Chunky Chicken Chili
Night Three: Turkey Chili Casserole
Night Four: Stuffed Bell Peppers

Now, for the first Recipe:
Rosemary Lemon Chicken

The following, from Mama Manifesto, is one of my favorite chicken recipes. I adapt it by adding 4 cloves of chopped garlic and one tablespoon of Dijon mustard to the marinade. I like to use 3 pounds of bone-in, skin-on breasts (my choice) or thighs (Kevin's). I also season with coarse salt and freshly ground pepper before marinating, and baste with juices a few times while cooking.

For Night One, use half of the chicken, and shred (into bite-sized chunks) and reserve the remaining for Night Two. I served this super moist and flavorful chicken with fresh butternut squash & Parmesan ravioli and a green salad.

yeah, you started it! I will have to try this out. DH is not a huge fan of chicken.... well okay, "my" chicken... so hopefully this will help. Looks yummy

I love you for doing that, you know how much I love easy, yummy recipes. Especially ones you can reuse ingredients for!
