I. Mac & Cheese

Due to popular demand (okay, there were two of you), here is my recipe for simple, yummy Mac & Cheese with Broccoli and Tomatoes:


one pound elbow macaroni
one broccoli crown, chopped into bite-sized florets
one stick unsalted butter, divided
1/2 cup whole wheat flour
3 1/2 cups whole milk
one pound extra sharp cheddar cheese, shredded
4 oz. Parmesan cheese, shredded
2 teaspoons course salt
1/2 teaspoon ground pepper
1/4 teaspoon smoked paprika
2 tomatoes, sliced
2 cups fresh breadcrumbs

Preheat oven to 375 degrees.
1. Add pasta to boiling, salted water. Cook until al dente, according to package directions. During the last 2 minutes, toss in the broccoli. Strain.
2. Meanwhile, heat milk in a small saucepan, but do not boil. In a dutch oven, melt 6 tablespoons of the butter over medium-low heat. Whisk in flour until pasty. Slowly incorporate warm milk, whisking contantly until thickened. Off the heat, add cheeses, salt, pepper, and paprika, stirring until combined.
3. Add pasta and broccoli to the cheese sauce. Transfer mixture to a large baking pan, and top with sliced tomatoes. Melt remaining butter, and combine with breadcrumbs; sprinkle over the top of the dish. Bake for about 30 minutes, until golden and bubbly.


II. Baby Shoes

I am requesting a good home for these super cute Ralph Lauren baby shoes. I found them for a great clearance price, with my good friend Tegan in mind, only to find out she's expecting a boy.
Size 4 (eyelet) and 2 (plaid), they are sadly too small for CamCam. Seeing them in my closet just makes me sad, so I'm going to have to let them go. Mom, has Heidi revealed the sex? Have a girl on the way, or know someone who does? Leave me a comment...

did i really win? :) oh i love your story about meeting your idol. so sweet and cute! i met someone famous once and the whole time i'm in line i'm thinking he's just a person like me, but when i saw him and he was signing the piece of paper i was so star struck and just like, "ugh, ugh, hi...thanks" what a dork :)
